PATRICK MICHEELS
With more than two decades of culinary experience, Patrick has built his career around thoughtful technique and a love for French and Italian cuisine. His passion for the Driftless Region shapes his approach at Flatiron, where he works with local farmers and purveyors to showcase quality, seasonal ingredients and create dishes that feel both refined and approachable.

MATT DOOLEY
Matt is an entrepreneur with a passion for hospitality and bringing great ideas to life. A wine connoisseur and skilled mixologist, he brings creativity and an appreciation for the details to Flatiron—helping shape a food and beverage experience that feels thoughtful, approachable, and distinctly its own.
Owner
Born and raised in La Crosse, Calvin brings years of experience from some of the area’s most respected restaurants, including Schuby’s, where he worked through 2024. With deep roots in the local food and hospitality community, he’s passionate about making every visit to Flatiron memorable by creating an experience that keeps guests coming back.
